I am a big fan of breakfast being sorted in advance for me especially with the kids back in school. You can portion this out into Tupperware for the week or cut into it as you go. As with most recipes found here treat this as a guide and make it your own. No bananas/don’t like them? Increase the brown sugar or add a bit of honey. Don’t want to add an egg? Add a banana or a bit of applesauce. Dried fruit can be used in place of fresh fruit but I would scale back the amount 1/2-3/4 cup. Shredded or diced apple, zucchini, banana/nut, and adding some small chunks of cream cheese on top just before baking are some of my favorite variations.
Baked Oatmeal (like oatmeal, but cake)
2 cups old fashioned oats (not instant and not steel cut)
1 tsp baking powder
1 tsp salt
2 tsp cinnamon
1/4 tsp cardamom (optional)
1/4 cup brown sugar
1 very ripe, mashed banana
4 Tbsp butter, melted
2 cups milk of your choice
2 tsp vanilla
1 cup of blueberries, diced peaces, apples, banana, or a combination of both
1/2 cup nuts or shredded, unsweetened coconut
Preheat the oven to 350
Grease an 8x8 (or 9x9) cake pan, set aside
Add all the ingredients in a big ass bowl and stir well to combine
If this feels wild to you, you can use two bowls and combine the oats through the brown sugar in one large bowl and then combine the butter through the fruit/nuts and then add them together but why dirty two bowls, honestly.
Pour it into your prepared dish, add a bit of fruit and/or nuts on top if you like
Bake for about 40 minutes, starting to check in 5 minute increments at the 30 minute mark (I usually let mine go about 45 minutes but pay attention to your climate and oven)
Let it sit for 10 minutes before cutting
