Fake Focaccia
Let’s call it what it is and it’s not focaccia and that’s okay.
It’s focaccia-esque.
You’re going to use the recipe found here however, if you can, I would suggest you use bread flour specifically for this recipe/variation and absolutely you can use it in the crust recipe as well. It really does make a difference in the crumb of the “focaccia” but if you use standard all purpose because that’s what you have, I’ll never judge (I do too sometimes) and there’s a chance most people won’t notice the difference.
Fake Focaccia

Preheat the oven to 450
Add 3 Tbsp olive oil to an 8x8 pan, set aside
Once the dough has rested for 10-20 minutes you’re going to put it in the pan you just prepared, using your finger tips to coax it to the shape of the pan and into the corners. Let it hang in the pan while the oven preheats.
Once the oven is preheated drizzle another 1 Tbsp of olive oil on the top of the dough and then dimple it with your fingertips as you would when making focaccia. You can add some oregano, chopped garlic, shaved parm, or literally nothing to the top of it. I used the agilo oglio spice blend from Trader Joe’s this time.
Serve along side the White Beans with Jammy Tomatoes or whatever else you’re feeling. Slice it lengthwise and make sandwiches. Tear pieces off while it’s still warm and dip it in jarred marinara sauce you haven’t bothered heating up. Whatever forever.
