White Beans with Jammy Tomatoes
Think of this recipe in a similar way that you approach the jammy tomatoes themselves in that you can take this a lot of ways. Pizza-esque beans? Add several whole sprigs of basil, oregano, and/or thyme when baking the beans with the tomatoes. You could add some za’atar or maybe some preserved lemons, or even olives and capers to put together a puttanesca-esque meal.
The versatility is endless.
White Beans with Jammy Tomatoes
1/2 of the recipe for Jammy Tomatoes
1 can of white beans such as cannellini, rinsed and drained *of course you can make whatever type of white beans yourself if you prefer. This recipe is simply staying the Low Lift course.
Preheat the oven to 350
Add the beans and tomatoes to a 9x13 baking dish, mix well to combine. Decide if want to add any herbs while baking or if you rather wait until the end. I added basil sprigs myself but do your thing.
Bake for 20 minutes, stirring once.
Look at that, a second meal knocked out in less than 30 minutes.
